I've not done much baking recently so today I decided to try and make these raspberry and white chocolate brownies. I bought lots of reduced raspberries in the supermarket so I did some searching and found this recipe which looked really good. You will need the following to bake these brownies...
- 115g Butter
- 115g Caster Sugar
- 2 Eggs
- 125g Plain Flour
- 200g White Chocolate, chopped
- 115g Fresh Raspberries
To start you will need to pre heat your oven to 170 degrees (fan) and grease a brownie tin.
Melt together the butter and half the chocolate (100g) in a pan over a low heat until the two ingredients are combined. Leave this on the side to cool.
Whisk the eggs and sugar in a mixing bowl with an electric mixer until the mixture is very creamy and slightly thick. This step took me about 5 minutes.
Next, sieve the flour and melted chocolate/butter mixture over the eggy mixture and fold together with a spoon. Make sure you are gentle here because you don’t want to un-do all the work you did making the eggy mixture thick.
Now fold 50g of the remaining chocolate and 70g of the raspberries into the mixture.

Carefully pour the brownie batter into the pre greased tin and finally sprinkle it with the remaining chocolate and raspberries.
Bake in the pre heated oven for 35-45 minutes until lightly golden brown. I found 40 minutes was perfect for me however every oven is different so you should test for yourself.
Once the time is up and you think that your brownies are cooked, take them out and leave them to cool. Once they are cooled down, cut them up into squares and wait for the compliments from family and friends!
